Central Restaurant is an innovative high altitude project created to help promote the preservation of peruvian ecosystems through food, focusing on the experience of sharing the diversity and culture that inhabits the depths of peruvian regions.
This is an avant garde restaurant. You go for the food, but mainly for the experience. Central’s restaurant owner, Virgilio Martínez and his team bring the ingredients back from all types of regions in Perú and experiment with it, creating really moving and extraordinary food compositions that explore the huge diversity of flavours in Perú. This restaurant reached number six on The50Best restaurants during 2018. Excited to see what 2019 brings for them!
